Gajar halwa
Ingredients: -

Carrots 2 kg (grated)
·
-Milk (boiled) 2 kg
·
-Sugar 1 & ½ cup or to taste –
·
Khoya ½ cup –
·
Oil/Ghee (desi) ½ cup or as required
·
Pistachio half cup for garnishing sliced
·
Almond skinned cup garnishing sliced
method
1.
wash the carrots then peel and grate carrots.
2.
In a pot, add carrots and heat up on high flame for 2-3
minutes.
3.
Add milk (boiled) and bring the whole mixture to a boil then
mix it.
4.
On a medium low flame, uncovered, grated carrots will cook in
the milk and the milk starts to reduce and evaporate.
5.
Now cook on high flame and keep on stirring in between
6.
When all milk evaporates, add sugar and give it a good mix.
7.
Keep stirring and continue to cook on a high flame.
8.
Add khoya,ghee and mix well.
9.
Towards the end,add and dry fruits/nuts and give it a good
mix. -Cover and put it on simmer for 2-3 minutes.
Gajar halwa is ready.
