Authentic Burn’s road Waheed ke kabab
Waheed
is a famous burnroad outlet in Karachi, its basically a minced beef recipe
recipe that has been a hot seller since last 50 years. Enjoy!
INGREDIENTS:
1. Minced beef qeema -1kg
2. Meat tenderizer 1tsp
3. Yougurt ½ cup
4. Ginger garlic paste 1 ½ tbsp.
5. Besan (gram flour) 3tbsp
6. Red chili powder 2tbsp
7. Red chili flakes 1tbsp
8. Turmeric powder (haldi) 1tsp
9. Coriander powder 2tbsp
10. Black pepper freshly ground
1tbsp
11. All spice (garam masala) powder 1tbsp
12. Oil/ghee or butter 1cup
13. Onion 1 small thinly sliced
14. Salt to taste (around 1tsp)
15. Coal for dum
RECIPE:
1. Marination : marinate minced
beef with tenderizer , ginger garlic paste and yogurt for half an hour.
2. Now in a pan dry roast all the dry ingredients besan coriander red
chili red chilli flakes, black pepper turmeric . roast till the besan and
masala start giving its aroma and changes its color.
3. Add this roasted masala in the
marinated qeema and wait for half an hour.
4. Fry onion in oil. once its
golden brown add the marinated qeema.
5. Fry it a little until the qeema
starts changing color to greyish.
6. Add 1 cup water cover the lid
and cook on low flame for about 30 min. do keep a check if water dries up add
some more.
7. After 30 minutes check the consisteny
it should be like fine paste.
8. Add garam masala cook for 1
minute
9. Give coal dum ( make coal red
hot , put a small metal dish on the qeema then put the red coal over this dish,
put a few drops oil until the coal fumes, cover the qeema so that it soakes the
coal aroma in)
10. Waheed kabab are ready to serve
