Traditional Chicken Handi

Handi chicken

Im updating my food blog now, actually I was busy with exams, you guys will be reading more recipes from me ..stay tuned  all the food lovers out there :D

This is by far the best handi chicken I have tasted. one of my mother's special. Enjoy !

INGREDIENTS
1.    Chicken boneless ½ kg
2.    Tomatoes blended (with skin) – 2 medium
3.    Ginger finely cut around 1 tbsp
4.    Garlic paste 1 tsp
5.    Green chilies sliced in half 4-5
6.    Onion fried 1 tbsp
7.    Red chili powder 1 tsp
8.    Dry Coriander seeds (sookha dhaniya) 1 tbsp
9.     Cumin seeds 1 tbsp
10. Turmeric powder (haldi) ¼ tbsp.
11. All spice powder (garam masala) ½ tsp
12. Fenugreek leaves 1 tsp
13. Yogurt whipped 2 tbsp
14. Fresh cream 4 tbsp
15. Salt to taste
16. Oil ½ cup
17. For garnish ginger and green chili sliced


METHOD:
1.    Take a pan or a traditional handi if  you have one, pour oil and add garlic paste till golden (takes about half a minute)
2.    Now into the pan add tomato paste and fried onions and stir fry for about 5 minutes.
3.    Now add salt, turmeric powder and red chili powder and fry until the oil separates from the mix
4.    Now add chicken into pan and fry till the water dries out.
5.    Now add yougurt cumin, coriander seeds ginger and green chilies and fry for a minute.
6.    Add fenugreek , all spice powder and cream and remove from the flames
7.    Garnish with fresh ginger and green chilies
8.    Serve hot with nan or paratha
