Mutton handi.(lamb handi)


Mutton handi.

Ingredients:

1.      Lamb meat -1 kg
2.      Chopped garlic -2 tsp
3.      Onion roughly chopped medium- 3
4.      Tomatoes roughly chopped medium -3
5.      Yogurt - ½ cup
6.      Red chilli powder -1 tbsp
7.      Haldi- 1 tsp
8.      All spice powder-  1 tbsp
9.      White cumin roasted  and powder- 1 tbsp
10. Almonds -6
11. Coconut powder- 2 tbsp
12. Butter -2 tbsp
13. Kasori methi -1 tsp
14. Oil- 4 tbsp
15. Fresh cream -1 cup
16. Salt to taste

Method:

1.      For the traditional taste take clay handi(clay cooking pot) but you could also use any other pot if clay pot unavailable.
2.      In a clay handi  add tomatoes , onions, 1 tsp garlic and 1 cup water and let the mix boil until onions are well cooked.
3.      Remove from stove, let it cook a little then remove all the tomatoe skins then take this mix add butter and grind this mix. Set it aside
4.      Grind almonds and coconut with yogurt and set this aside too.
5.      Now take the same clay handi and add oil , heat oil for 2-3 minutes on medium flame. When the oil is heated first add the yogurt and almond mix and stir fry this for around 4 minutes.
6.      Then add the tomato onion paste , red chili powder, haldi, cumin, all spice powder and stir fry until oil separated from the mix.
7.      Add mutton into the handi and salt and cook on a low flame until the meat is well cooked .
8.      Now add fresh cream kasori methi and cook on very low flame for 5 to 7 minutes.
9.      Serve hot with nan.
