Hydrabadi
dum kay kabab> hydrabadi meat dish
INGREDIENTS:
1.
Meat cut into broad fillets (pasanday style)-1kg
2.
White cumin seeds- 1 tbsp
3.
Poppy seeds (khushkhas)- 2 tbsp
4.
Dried coconut crushed -1 ½ tbsp.
5.
Almonds -8
6.
Roasted chicpeas ( bhonay
chanay)-2tbsp
7.
Red chilli powder- 2 tbsp
8.
Salt to taste or 2 tsp
9.
Green cardamom -6
10. All
spice (Garam masala) 1 tbsp
11. Yogurt
250 ml (or pint qrt)
12. Raw
papaya paste or meat tenderizer-3 tbsp
13. Oil
2-3 tbsp
14. Green
chilli and fresh coriander for garnish
Methods
1.put
salt and papaya paste in meat , mix well and leave it to marinate for 2 hours.

on low flame roast cumins, poppy seeds almonds and crushed coconut. After
roasting grind these into powder and put this into the marinated meat mix.

.Also grind the roasted chickpeas (bhonay chanay ) and put this also into the
marinated meat
4.Now
add red chili powder yogurt and all spice (garam masala) into meat and mix well
5.In
a large pot and oil and cook the meat on very low flame for almost 1 hour.
Serve hot and garnish it with fresh green
coriander and green chilli
