CHICKEN PARATHA


Chicken paratha:
Ingredients

For dough :

1.      wheat flour --3 cups
2.      salt to taste
3.      water to knead the dough

for the filling
1.   chicken boneless---½ kg
2.   black pepper powder
3.   whole black pepper-- 10
4.   onion chopped finely
5.   green chili finely chopped—4
6.   garlic cloves—2
7.   maida/ white flour –2 tb spoon
8.   lemon juice of 2 lemons / around 2 tbs lemon juice
9.   bay leaf (tez path)—2 leaves
10. water 1 cup
11. fresh green coriander—1 bunch
12. fresh mint leaves— ½  bunch
13. salt to taste

Method

For the dough: knead the wheat flour with salt and leave it for half an hour for the dough to settle

For the chicken filling:
1.      take a medium sized pan. Put the boneless chicken, bay leaves, garlic cloves, whole black pepper and salt and boil it in water until chicken is cooked. These ingredients will give flavor to the chicken and remove the chicken’s smell.
2.      Boil until all the water evaporates.
3.      Take the boiled chicken (leave out all the spices that were added for flavor)and mince it in a grinder.
4.      To the minced chicken add chopped onions, fresh coriander, fresh mint leaves, green chopped chilies , black pepper powder and lemon juice. Mix all of these well.


5.      Now take the dough and make two equal sized roti/flat bread (make a small fist sized dough ball> then with the help of dough roller roll it flat> these roti should be roughly 5 inches in diameter)
6.      Now take a handful of chicken filling and spread it on one roti while the other roti should be used to cover it. It will now be like a very big flat sandwich.
7.      Press the sides of the roti till they are glued together
8.      Now place this on a heated flat pan/tawa and cook it with a tbs of oil until golden brown.
9.      Cook the other side the same way as before until golden brown.

Serve hot.
