Aloo Samosay! (potato samosay)



Samosay are crusty on the outside with a spicy mashed potatoes filled centre. These are easy to make snack and enjoyed with delicious dips. I will be uploading some great dips later on
Ingredients :
For the outer crust:
1.      refined flour(maida)- 2 cups
2.      Baking soda- ¼ tsp
3.      Salt – ½ tsp


For the potato filling


1.      Potatoes 3 boiled and mashed
2.      Onion -½ chopped
3.      Whole white cumin- ½ tsp(safed zeera)
4.      Red chillies powder 2 tsp
5.      Turmeric powder 1 tsp(haldi powder)
6.      Mustard seeds ½ tsp(rai dana)
7.      Whole coriander ½ tsp(sabit dhania)
8.      Green chillies 3
9.      Lemon juice 2 tsp
10. Fresh coriander 2 tbsp
11. Salt ½ tsp
12. Oil for frying+5 tsp


Method:
for the dough:
1.      to the refined flour add baking soda, salt and 3 tbs of oil and knead a hard dough with water.
2.      Leave this dough for 10 to 15 minutes to rest.
3.      Make small sized balls , then roll them flat like a chapati the size of your palm, dust them with flour and leave them for 25 minutes
For the filling:
1.      take a medium sized pan put 2 tbs of oil. When the oil is hot, add onions, mustard seeds and white cumin and sauté until golden.
  1. To this mix add the mashed potatoes then add the red chilli powder, salt, turmeric powder, whole coriander, green chilies, fresh coriander. Toss this mix for five minutes until they are all roasted. Now add the lemon juice and close the stove.
  2. Take the flat rolled chapatti which was roughly round and cut it in equal halves.
  3. Take a half and make a cone out of it.
  4. Fill this cone with the potato filling.
  5. Close the opened part of the cone by gluing it with some dissolve flour.
  6. Now deep fry these somasa
  7. Serve hot with delicious dips.
